Soy sauce is a fermented condiment, traditionally used as a foundational ingredient in Asian cuisine. Shoyu is a less salty variety with a mild flavour brewed from whole soy beans, wheat, sea salt and koji - a culture used to naturally begin the fermentation process. It makes a tasty marinade for meat and vegetables and addtion to stirfries and dressings.
