Just as its name suggests, the kidney bean is shaped like a kidney. They're a versatile bean with a mild and earthy flavour. Kidney beans hold their shape well and readily absorb other flavours, so they're ideal in simmered dishes such as soups, stews and casseroles. Generally, dried beans are slightly more cost effective than the canned variety, but they don't come ready to eat. It's really up to personal preference when it comes to choosing between the two.
