Once cooked, our New Zealand pearl barley has a chewy texture and nutty flavour, similar to brown rice. Popularly used to thicken soups, stews and add texture to salads, barley water makes a refreshing beverage, too. According to Ayurveda, barley water helps to keep the body cool in summer climates - ideal for a trip to the beach! Simply take the water left over from cooking the grains, and flavour with your choice of citrus fruit and natural sweetner. We love ours with lemon rind and a touch of barley malt syrup.
